Honey Chicken Kabobs



Honey Chicken Kabobs

1/4 cup vegetable oil
1/3 cup honey
1/3 cup soy sauce
1/4 tsp ground black pepper
2 cloves garlic, chopped
4 skinless, boneless chicken breasts, cut into 1 inch cubes
1 onions, cut into 2 inch pieces
1 red bell pepper, cut into 2 inch pieces
2 zucchini, sliced

In a large bowl, whisk together oil, honey, soy sauce, pepper, and garlic. Reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken and vegetables in a large Ziploc with the rest of the marinade. (I marinated the chicken and veggies in different bags). Marinate in the refrigerator at least 2 hours. The longer it marinates the better.
Preheat grill to high heat.
Drain marinade from the chicken and vegetables, and discard marinade. Thread the chicken and vegetables onto skewers.
Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade frequently.

Chicken Marinade

This is one of my favorite marinades. It's so easy and so good!

1 1/2 cups Sprite
1 1/2 cups soy sauce
1 tsp lemon juice
1 tsp garlic (or however much you want
2 Tbsp oil

Mix all ingredients together. I usually mix the ingredients in a gallon size ziploc bag and then add the chicken. Marinate 4-5 hours in the refrigerator.

Hamburger Buns

This recipe is courtesy of my Grandma Richards

8 cups flour
2 Tbsp yeast
2 cups warm water
3/4 cup cooking oil
1/2 cup sugar
1 Tbsp salt
3 eggs
sesame seeds, optional

Combine 4 cups flour and yeast in large mixing bowl. Add water, oil, sugar and salt. Mix together. Add eggs. Mix for 3 minutes. Add remaining flour so you have a soft dough. Knead for 5 minutes. Place dough in a greased bowl, turning once so top of dough is also greased. Cover and let rise until double - about 1 hour.
Divide dough in to 3 sections. Cover and let rest 5 minutes. Divide each section into 8 balls. Press flat between hands to create a 3 1/2 inch circle. Place on greased cookie sheet. Brush water on top of buns and sprinkle with sesame seeds. Let rise until doubled, about 30 minutes. Bake at 375 degrees for 10 minutes. Brush tops of buns with melted butter.

Chicken Skewers with Peanut Sauce

This is another one of our favorite Kraft recipes

1/4 cup Catalina Dressing
3 Tbsp peanut butter
1 Tbsp soy sauce
1 lb boneless skinless chicken brests, cut into lengthwise slices
2 Tbsp Dry Roasted Peanuts, chopped
1/4 cup chopped green onions

Mix Catalina dressing, peanut butter and soy sauce in large bowl until well blended. Add chicken; toss to coat. Cover; refrigerate 10 minutes to marinate.

(The recipe calls to cook chicken in oven with broiler - But I use our grill.) Preheat broiler. Remove chicken from marinade; discard marinade. Thread chicken evenly onto soaked wooden or metal skewers. Place on rack in broiler pan or grill.

If you choose to broil, broil 4 to 6 inches from heat, 4 min on each side or until cooked through. Serve over white rice, sprinkled with peanuts and onions.
